Why pastured beef?
Raising animals on pasture brings together the health of the land, the animals, and the people who eat their meat. Pasture-based systems mimic natural grazing patterns, letting cattle move across varied grasses and forbs that build soil structure, cycle nutrients, and encourage deeper root systems. That regenerative process reduces erosion, increases water infiltration, and helps sequester carbon — benefits that extend beyond any single animal or season.
Labels like “grass-fed” or “grass-finished” can be confusing; they don’t always tell the whole story and animals can still be finished in feedlots. “Pasture-raised,” by contrast, describes animals that have spent meaningful time grazing on open land — the most ethical and regenerative choice for healthier ecosystems and healthier people. Animals raised on pasture exhibit more natural behaviors, lower chronic stress, and require fewer inputs, which contributes to better welfare and better meat.
Knowing your farmer is the most reliable way to ensure you’re getting the healthiest, most responsibly raised meat. When you buy directly from a producer you trust, you can understand how animals are managed, when they graze, and how the land is cared for. That transparency matters for food safety, nutritional quality, and peace of mind.
At Flat Rock Creek Ranch, our Black Angus graze Hill Country pastures where diverse forage produces leaner, nutrient-rich beef with a fuller, real flavor. Pasture-raised beef from our ranch tends to have higher levels of omega-3 fatty acids and a favorable fatty-acid profile compared with conventionally raised beef.

FARMERS MARKETS: Come on out to the Downtown Marble Falls Farmers Market every Tuesdays 4-7pm and the Round Mountain Cider Mill every Sunday 12-4pm.
WHOLE & HALF COW: Click here to let us know your interest in investing in a whole or half cow. These are periodically available. Price is calculated based on hanging weight at the current direct-to-consumer market price. See our blog post here on the Three Weights Explained.
CALL OR TEXT: Give us a call or text - and Eddie or I (Katie Jo) will put together an order based on your request and send you a price before pick up. You can pick up at the ranch, or we can prepare your order for pickup at one of the markets. Happy to discuss delivery, we just don’t get very many requests for it.
From Ranch to Table, Naturally.
Cattle grazing on native grasses and plants produce healthy fats in their beef. Beta-carotene (vitamin A) is high in the yellow fat of naturally grazing animals.
All our Black Angus cattle live on pasture their whole lives, raised on the land they were born on until they reach full weight (2-3 years). Our beef has no antibiotics, added hormones, or steroids. It is dry-aged for 14 days and USDA inspected. Simply natural.

Our Processor
All of Flat Rock Creek Ranch’s beef cattle are processed at a USDA Certified processor in Johnson City, TX. Harvest House carefully prepares and packages all of our cuts, freezes them, and we bring them back to the ranch where they are stored below 0 degrees for pick-up or delivery.
